Neem Restaurant’s Head Chef Ercole Quaranta started his career at the young age of 13 in Milan, Italy at the famous “Primula Nera” Restaurant.
Ercole has been in Koh Samui since 1992 and has been executive chef/manager at a variety of of Italian restaurants together with a Beach Club in that time.
Arriving at Tides in July 2017, Ercole immediately set about reviewing both the food and the beverage menu, retaining the most successful options and introducing many sophisticated and exciting culinary options.
Thai and Italian are the cooking styles–making full use of locally sourced products combined with the finest imported gourmet delicacies.
We are also very proud to have a team of highly skilled and talented Thai chefs, led by ‘Pui,’ who are here to serve you with that extra spice to complete your dining experience.
All dishes are designed around tradition, freshness and authenticity to provide true flavors of both Thai & Italian cuisine.
